We would like to shine a spotlight on Gail, the owner of Cheesecake Etc.
We have a “sweet” relationship with Gail. A relationship between two vendors turned into a grand friendship over the years. Of course the New York Italians get along! Gail began running into Vinny at weddings and soon realized that she had a favorite DJ company. Through networking events, parties, and working in the industry, a friendship developed not only between Vinny and Gail but Diane and Gail. Gail has often provided baked goods for events Split Second has thrown. We can attest that her baking is next to none. Gail was in our first episode of Split Second Sound’s new show Charlotte Wedding Insider on WCCB as one of the highest respected wedding cake bakers in Charlotte.
We have an amazing relationship with Gail. Not only because of Gail herself, but because at Split Second Sound, we could not speak higher of her and her incredible professional company. She often provides us with To-Go boxes for her incredible baked goods that are melt in your mouth goodness! If you have not had a wedding cake or any Italian baked goods from Gail, you are truly missing a treat.
Gail began baking and decorating cakes from her home in 1997. After extensive renovations and a master business plan in mind, she transformed her home into an industrial kitchen that fits all her baking needs and is licensed and zoned to meet all business requirements. After beginning baking cheesecakes, which is where the name came from, she evolved into a custom bakery that specializes in wedding cakes, groom’s cakes, and high-end specialty cakes. She continues to offer cheesecakes and her “Charlotte Famous” Italian baked goods. We asked what got Gail into baking and in true “Gail Fashion” she responded – “Hey! I’m Italian. Of course I bake.”
Gail grew what started out as a normal tradition to her friend inviting her to a cake decorating class that she fell in love with to baking and decorating over 150 wedding cakes a year. Gail is mostly a one-woman show, but her daughter does help at bridal shows and her husband helps with deliveries. Being so hands on allows Gail to give her clients a consistent product. Her clients can rest easy that Gail is in complete control of their wedding cake.
Gail prides herself in not producing “cookie-cutter” cakes. She meets with her clients and takes their ideas from magazines or Pinterest and helps mold them into a unique idea that reflects the client. She is able to create incredible cakes because of the personal interaction and appreciation. These cakes are not only beautifully decorated but deliciously and artfully made. Like she said, she’s Italian – she knows how to bake. Just like a DJ can make or break a wedding day, hiring a non-professional to provide your wedding cake can cause just as big of a problem as not hiring the right DJ. Gail advises that whatever vendor you choose, whether it be for a wedding cake, florist or DJ, you need to make sure that they are professional. She emphasizes how important it is to read reviews, make sure the cake is made from scratch, and the baker is licensed and zoned. There are too many horror stories about couples that have had family members make their cake, and it doesn’t take a big imagination to think what all could go wrong with the cakes. You DO NOT want your cake to fall apart before the cake cutting. Gail’s cakes are sure to be just as moist, not overly sweet and creatively beautiful on your wedding day as when you go for your tasting.
